3 cans tuna (albacore works well)

1 1/2 c. bread crumbs (I like to use the seasoned breadcrumbs)

2 eggs, slightly beaten

1 1/2 c. mayonnaise

1 c. finely chopped celery

1 c. finely chopped onion

Vegetable  oil

Mix together all ingredients (except oil) and shape into croquettes.

Heat oil over medium heat, add croquettes.

Cook for 5 minutes, and flip them over.

Cook for 5 minutes more.

Goes well with mashed potatoes and a fresh salad.

    I add a grated zuchinni and carrot and then adjust the eggs and bread crumbs. This way I know my kids will get their veggies for the day. ;)

    Yum. I make something similar only with canned Salmon (All those good for the brain essential fatty acids) and I use onions and green peppers instead of celery.

    So nice to eat stuff that I can have (REAL) ice cream after. :-D
