This Week’s Meal Plan – Week Three

I need to learn to either cook less or to have one night a week (other than Sunday) to be leftover night. Last week I did not make the Eggplant Parmesan as the fridge was full of leftovers. I now have Pasta Fagiole in the freezer, enough for another meal for everyone.
This week, on Wednesday, I have Chicken Pot Pie on the menu – I am using the chicken that I cooked in the chicken soup for last Shabbat. This cuts down on cost. Which is part of the whole point of meal planning.
I still have two eggplants in the fridge that I have to use up – I think I will make a babaganoush for Shabbat next week with them. Here is the plan, followed by the shopping list.
Monday: Jazzed Up Mac & Cheese with Sliced Up Veggies and Chummus
Tuesday: Slow Cooker: Veggie Curry and Rice
Wednesday: Chicken Pot Pie with Mashed Potatoes
Thursday: Tofu Stir Fry
Shabbat: Soup, Fish, Challah, Coq au vin plus Grilled Chicken, Firecracker Quinoa Salad w/ Chickpeas & Artichokes (leave out the feta), Potato Kugel / Rice / Drunken Sweet Potatoes , Babaganoush, Deconstructed Chocolate Cake. Shabbat Lunch: Deli Sandwiches, Coleslaw, Pickles.
