RECIPE – Mock Crab Salad
We make this recipe for every Shabbat lunch. I mean, the kids make this salad every week. The sixth graders love to put on their aprons and work together to make this delicious salad. My Moshe came up with the recipe, based on a salad he had made at his dad’s.
1 package mock crab sticks (available in your kosher grocery’s freezer section), thawed in the fridge overnight, diced
1 English cucumber, diced
1 can sweet corn, drained
4 cups Rice Krispies
1 1/2 cups mayonnaise
Salt and pepper to taste.
Combine all the ingredients in a large bowl and mix well. Personally when I make it I add more mayo and a little lemon juice. This is excellent on its own, or on a ciabatta roll.
