Quinoa Salad with Multicoloured Peppers

Ruby V left me this recipe on a comment on the blog, I adapted it a little, but here is the recipe she posted – and it was yummy and totally Gluten Free.

What you need:

2 cups quinoa, rinsed,
4 cups water
peppers (I usually do one orange, one red, one green or yellow)
one to one and a half onions, chopped fine
2 small bunches parsley, chopped
currants, about a half cup, or more to taste (I left these out)

half cup olive oil
half cup lemon juice
agave or other gluten free sweetener to taste

What to do:

Put quinoa in pot with water, cover, and boil for 5 min, turn off and leave covered for 15 minutes.

Chop peppers and onions, and parsley.

When quinoa is done (ring separated from kernel) add veggies, mix

Make dressing, add sweetener to taste, salt and pepper. Add to salad, mix well.

Add currants and mix.

Chill in fridge.

    nice recipe! I might substitute craisens instead of the currants.
    Hint for rinsing the quinoa…drain it through a coffee filter because the grains are too small for most collanders.

    Thank you very much for this receipe. I just tried it out, and it is excellent.

    Since I have to go a lot to places where there are no kosher restaurants available, this will be a nice addition to my pick-nick-list.

    Fille, I find that it’s even better after a day or two later. The leftovers are very yummy, and it keeps well for days.

    Another favorite is a salad with quinoa, cilantro, black beans, peppers and corn. Yummy. LIme and oil for the dressing with some cumin.

    I just tried it for Shabbat noon, and it is exactely as you say: it becomes even tastier with time.

    This salad is so great!!!!

    It saved me over 3 days of Yomtov & Shabbat (6 meals) in a strange city, in a hotel room (with a fridge).

    Make this quinoa salad, and all sorrows & loneliness go away… It just rocks….

    Well, but I heard there are only limited quantities of Quinoa available, so let’s not spread it too far…
