Hadassah’s Vegestrone Soup

Ingredients:

5 stalks of Celery, sliced

1 lb of baby Carrots

2 cans chopped Tomatoes (or just tomato sauce)

1 -2 cups Frozen Peas

1 sliced Leek

3 cups Vegetable Stock (or you can use water with vegetable soup mix)

1 cup Water

2 – 3 cloves of Garlic, crushed

1 tsp Sugar (optional)

½ tsp Pepper

½ tsp Salt

1 tsp Chopped Parsley

1 cup Pasta (I use more, because I like lots of noodles)

How to:

Place all ingredients but pasta into large soup pot. Heat on high until boiling. Simmer for 60 minutes. Add noodles. Boil up again for 10 minutes.

Serve with thick crusty bread.

12 generous servings.

Note – the kids say this would be excellent with potatoes added AND hot dogs…

    Everything is better with hot dogs if you’re a kid. I knew one family who added them to the cholent based on that reasoning alone.

      My kids and my husband once encouraged me very strongly to add hot dogs to the cholent. Never again. Was gross!!

      My kids love kosher style jambalaya- probably because of the sausage in it!!

    Sounds delicious.
    I often add 1 cm thick sliced sausages to the cholent. Very tasty
